Bring it aboard
November's port of call is Flores, an island in Indonesia's Lesser Sunda chain. The coffee comes from the Bajawa region, in the highlands of central Flores near Mount Inerie, where it grows on small family farms in mineral-rich volcanic soil.
The farmers here process it wet-hulled, known locally as giling basah. The parchment comes off while the bean is still moist, which is what gives Indonesian coffee its heavy body, low acidity and earthy depth.
Roasted medium-dark, it drinks rich and smooth. Cocoa leads, a subtle citrus note lifts it, and earthy undertones carry the finish. It is a bold cup that stays easy to drink every morning, and a change of course from the Central and South American coffees most of us start on.
Coffee of the Month is one origin, for one month, and then it is gone. That is not a marketing deadline. When the month ends we move on to a different farm, and this coffee sails.
