Here is what we have this month.

This month's featured cup is Sulawesi Toraja, from the Toraja highlands of South Sulawesi in Indonesia. It is wet hulled by the Giling Basah method, which strips the parchment while the bean is still damp and gives Indonesian coffee its heavy body and low acidity.

It drinks full and smooth, with vanilla and dark chocolate through the middle and a clean citrus lift at the end. A French press or a pour-over at a medium-coarse grind suits it best.
